Watermelon Daiquiri

The warm summer sun has finally come out and whenever I see watermelon in the grocery store I know its officially summertime. My fiancé and I will snack on a whole watermelon throughout the day on a weekend and can go through about one a week during the season and what else goes perfectly with the summer heat? A refreshing cocktail! So why not marry watermelon with a drink? I vote yes. This is a version of a daiquiri, and not your frozen daiquiri you see at restaurants although if you wanted one you could easily freeze some of the watermelon and do this!

A classic daiquiri is the perfect summer drink to pair with refreshing watermelon and the color of this one is gorgeous! Simply cut up a watermelon and put it in a food processor or blender and strain it to have watermelon juice. I double strain it to have an extra smooth juice, but its not necessary. My go to of this cocktail recipe uses plain white rum, but coconut rum tastes delicious too and adds to that summer vibe. This recipe makes enough watermelon juice to make several drinks, OR freezing watermelon juice into ice cube trays is a delicious option as well!

Watermelon Daiquiri

  • 3 cups cubed watermelon
  • 2 oz White rum or coconut rum
  • 1 oz Lime
  • ½ Simple syrup
  • Place watermelon cubes in food processor or blender and blend until its all juice. Strain one or two times for extra smooth juice.
  • In a cocktail glass, add the rum, lime, simple syrup and stir.
  • Add a splash of watermelon juice (about 2 oz.) until its to your satisfaction,
  • Enjoy!
