I’m a sucker for peanut butter and have been wanting to make a pb blondie recipe and here it is! I took inspiration from my favorite protein ball recipe and transformed it into these blondies. You have coconut, chia seeds, chocolate, and peanut butter of course!

If you’re not a fan of coconut or don’t have any of the seeds in the recipe you can leave these ingredients out and have PB & Chocolate blondies which is going to be just as delicious.
Tropical Seedy PB Blondies {Healthier}
- 1 1/2 sticks (3/4 cups) melted butter
- 1/2 cup + 4 tbsp peanut butter (I used chunky PB, but you can use creamy too)
- 3/4 cup light brown sugar
- 1/3 cup granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup all purpose flour
- 1 1/2 cups whole wheat flour
- 1 tsp baking powder
- 1 cup mini chocolate chips + more for sprinkling on top
- 1/4 cup unsweetened shredded coconut
- 2 tbsp chia seeds
- 3 tbsp hemp seeds
- optional: course sea salt on top
- optional: baked coconut chips on top
- Preheat oven to 325°F. Grease a 8 x 8 inch baking dish.
- Mix together the melted butter and 1/2 cup of peanut butter in a microwave safe bowl and microwave for 30 seconds until fully incorporated.
- Stir in the brown sugar, granulated sugar, eggs and vanilla extract.
- Stir in the flours and baking powder until just combined. Mix in the chocolate chips, coconut, chia seeds and hemp seeds.
- Chill the dough in the freezer for 10 minutes.
- Spread half of the dough in the baking dish. Dollop the 4 tbsp of peanut butter on the dough and evenly swirl. Top with the remaining dough and spread out.
- Bake in the oven for 40-45 minutes. Remove from oven and sprinkle remaining chocolate chips on top. Place back in the oven for about 1 minute until chocolate is a little melted. Remove and sprinkle with sea salt. Enjoy!
